目的:了解贵阳市面制食品中铝含量情况,为卫生监督提供科学依据。方法:对贵阳市面制食品油条、馒头、糕点等进行随机抽样。按GB/T5009.182-2003法对所采集的141份面制食品进行铝含量检测,并对检测结果进行统计分析,再依据国家标准《食品添加剂使用标准》(GB 2760-2011)面制食品中铝≤100 mg/kg进行判定。结果:抽检的三大类食品中铝残留量的总合格率为84.40%。烘焙食品类、发酵面制品类和油炸面制品类铝残留量合格率分别为95.45%、87.76%、70.83%。结论:三大类面制食品中铝残留量均有超标,建议监管部门应加强宣传和惩治力度,保障人民群众健康安全。
Objective: To understand the content of aluminum in Guiyang City Noodle Food and provide a scientific basis for health supervision. Methods: Guiyang City, noodles, bread, cakes and other random sampling. According to the method of GB / T5009.182-2003, the aluminum content of 141 noodle foods collected was tested, and the test results were statistically analyzed. According to the national standard “Food Additives Use Standard” (GB 2760-2011) Aluminum ≤ 100 mg / kg to determine. Results: The total qualified rate of aluminum residues in the three categories of food samples was 84.40%. The qualified rate of residual aluminum in bakery products, fermented flour products and fried noodles products was 95.45%, 87.76%, 70.83% respectively. Conclusion: There are excessive aluminum residues in three categories of noodle foods. It is suggested that the regulatory authorities should step up publicity and punishment so as to ensure people’s health and safety.
