新兴蔬菜是指过去没有或很少进行大面积种植和商品化上市,而现在已经或正在引进、开发和开始流行的一类新颖的优质高档蔬菜。新兴蔬菜包括:①新引进的西洋蔬菜——指原产地在国外,我国过去未曾种植,新近从国外引入,并试种推广的一类“洋菜”;②新开发的稀有乡土蔬菜——指我国原产,过去只有在白食菜地或庭院中零星种植,未曾形成商品化产品,以往消费者很少食用(包括南方或北方很少食用),而现在已经或正在开发和开始流行的一类稀有乡土
