目的分析乐亭县2011年餐饮单位餐具消毒的现状和监测结果,为食品药品监管部门加强餐饮监管提供依据。方法随机抽取辖区内餐饮单位的餐饮具,采用大肠菌群快速检验纸片对抽取的餐饮具样品进行消毒效果监测。结果大型餐饮单位餐饮具合格率为92.9%,中型餐饮单位合格率为80.8%,小型餐饮单位(小吃店、快餐店、饮食摊)合格率为67.8%。不同消毒方法的消毒效果差异有统计学意义,高温蒸汽消毒效果最好,电子消毒柜的效果次之,药物消毒的效果最差。结论应进一步加强餐饮具消毒卫生知识的宣传,强化餐饮单位负责人对餐饮具安全卫生的意识,并加大卫生监督监测频次,以提高餐饮具消毒的合格率。
Objective To analyze the status and monitoring results of tableware disinfection in catering units in Laoting County in 2011 and provide the basis for food and drug regulatory authorities to strengthen supervision of catering. Methods We randomly selected the tableware of catering establishments in the area and used colloidal fast test paper to monitor the samples taken from the tableware. Results The passing rate of catering units in large catering units was 92.9%, that of medium-sized catering units was 80.8%, and that of small catering units (snack bars, fast food restaurants and food stalls) was 67.8%. Disinfection effects of different disinfection methods were statistically significant differences, the best high-temperature steam disinfection, followed by electronic disinfection cabinet, the worst drug disinfection. Conclusion The promotion of disinfection hygiene knowledge of tableware should be further strengthened and the person in charge of catering units should be more aware of the safety and health of tableware. Monitoring frequency should be increased to improve the pass rate of tableware disinfection.
