Yangzhou, with a population of 4.6 million people, is located in the Yangtze River Delta. As the cradle of Huaiyang cuisine, Yangzhou has more than 20,000 catering enterprises, offering 245,000 jobs. In 2018, its catering industry had an aggregate income of $2.3 billion. Yet, Yangzhou also excels in the promotion of its gastronomic heritage, with a large number of colleges and universities leading the country in the fields of food and cuisine. Furthermore, the Yangzhou Overseas Chinese Cuisine Celebration Centre, the first of its kind in China, trains over 100 foreign chefs annually.
