小麦籽粒发育初期总氨基酸含量逐渐增加,12~16d达到最大,随后降低,24d以后又缓慢增加至成熟;在整个过程中缬氨酸、赖氨酸、异亮氨酸、天冬氨酸的相对含量逐渐降低,而谷氨酸、脯氨酸、组氨酸和苯丙氨酸不断增加;籽粒发育初期游离氨基酸不断增加,12d含量最大,然后快速下降,到24d减慢,32d又快速下降,成熟的种子仅含0.04%,籽粒发育初期(开花后4~12d)游离大冬氨酸、丝氨酸、谷氨酸、内氨酸和脯氨酸含量较高,品种间氨基酸有一定差异。
The content of total amino acids in the early stage of wheat grain development increased gradually, reaching the maximum at 12 ~ 16d, then decreased and then slowly increased to maturity after 24d. The mature seeds only contained 0.04%, the free aspartic acid, serine, glutamic acid, arginine and proline were higher in the early stage of seed development (4 ~ 12 days after flowering), and there were some differences among the cultivars.
