豆芽菜简称豆芽。它是利用豆科植物的种子,在无光、无土及适宜温湿度条件下,培育成的芽菜类蔬菜。本文着重介绍其中的两种豆芽菜,即大豆芽菜和绿豆芽菜。它们的共同特点都是以其种子萌发后的幼芽,即下胚轴和子叶两部分供食用。豆科、大豆属的大豆古称菽。《诗经》等古籍已有著录。大豆原产于我国,它是种皮呈黄、黑、青(绿)三色大豆的统称。选用这三种大豆培育出的豆芽菜,以其原植物的名称命名分别得到黄豆芽菜、黄豆芽、黄豆芽儿、黄豆嘴;黑豆芽菜、黑豆芽、黑豆芽儿以及青豆芽菜、青豆芽、青豆芽儿、青豆嘴等名称。其商品实体,称“豆芽”时一般较长,约4~6厘米;称“豆嘴”时一般较短,或有1厘米。
