[目的]了解广州市越秀区居民油炸食品的摄入情况,为制定减少居民摄入油炸食品的干预措施提供依据。[方法]2011年7月,在越秀区抽取3个街道的425名城市居民进行调查。[结果]调查425人,调查前3个月内,油炸食品摄入率为69.41%,全部调查人群油炸食品每人每日摄入量P50、P25、P75分别为10.26、4.05、21.10g。油炸食品摄入率和摄入量,男性与女性的差异均无统计学意义(P>0.05);不同职业、不同文化程度、不同年龄人群的差异均有统计学意义(P<0.01)。在校学生油炸食品的摄入率高达76.57%,摄入量的P25、P50、P75分别为6.32、15.33、31.12g/人日。全部调查人群油炸食品摄入率与摄入量较高的依次为炸鸡翅鸡腿、汉堡、炸薯条。[结论]越秀区居民油炸食品摄入水平较高,在校学生的摄入率与摄入量均很高。
[Objective] To understand the ingestion of fried foods by residents in Yuexiu District of Guangzhou City, and provide the basis for making intervention measures to reduce the intake of fried foods by residents. [Method] In July 2011, 425 urban residents in 3 streets in Yuexiu District were surveyed. [Results] A total of 425 persons were surveyed. The ingested rate of fried foods was 69.41% in the first 3 months of the survey. The daily intake of fried foods in all surveyed population was P50, P25 and P75, respectively 10.26, 4.05 and 21.10g . There were no significant differences in the intake and intake of fried foods between men and women (P> 0.05). The differences among different occupations, different education levels and different age groups were statistically significant (P <0.01). In school students fried food intake rate as high as 76.57%, intake of P25, P50, P75 were 6.32,15.33,31.12g / person day.
