二噁英(Dioxin)又称二氧杂芑,是目前人类认识到的非有意合成,毒性最强的持久性有机污染物(POPs)。二噁英具有极强的亲脂性和生物难降解性,可以在环境中长时间稳定存在。通过生物聚集,二噁英会沿食物链富集到很高水平。人体摄入二噁英类污染物约90%以上是来自受环境污染的食物,其中主要是肉制品、乳制品、鱼类等动物源食品。二噁英类化合物污染食品事件屡有发生,往往带来巨大的社会不安和经济损失。
Dioxin, also known as dioxins, is the unknowingly synthesized and most toxic persistent organic pollutants (POPs) recognized by mankind today. Dioxins have very strong lipophilic and biodegradable, can exist in a stable environment for a long time. By bioaccumulation, dioxins can accumulate to a very high level along the food chain. About 90% of dioxin-like pollutants are ingested by the human body from food contaminated by the environment, mainly animal-derived foods such as meat products, dairy products and fish. The frequent occurrence of dioxin-like food contamination incidents has often brought about huge social upheaval and economic losses.
