大蒜为百合科多年生草本植物大蒜Allium satum L·的鳞茎.具有消肿、解毒、杀虫之功效.据测定,其鳞茎中不仅含有蛋白质、脂肪、维生素、尼可酸、钙、磷、铁、碘等人体所必需的营养成分,而且含有大量的大蒜辣素和大蒜氨基酸.据《本草纲目》记载:“大蒜能健脾胃,消毒气,疗疮疣,治痢疾等疾症.”古代名医华佗,早在一千多年以前,就已经用大蒜治病.因此,大蒜早已成为我国民间一味中药.具有很高的药用价值.
