以摇青纯熟、焙火精制,具有独特的观音韵的迷人品质传世的铁观音,如果持续这样下去,必然会被市场淘汰,没有人愿意喝伤胃的茶,换一个角度讲,这样的铁观音跑赢了大部分的北方市场,却失去了对乌龙茶情有独钟的南方茶客的心。铁观音属于青茶类优质品种,是乌龙茶中香、韵皆佳的佼佼者,因为近年来制法的偏绿茶化,在市场上出现了:喝铁观音伤胃的说法。那么,喝什么样的铁观音会伤胃,为什么以前没有喝铁观音伤胃的坊间传说,就此,笔者进行了此次实践与大家一起探讨铁观音制作法的变迁与茶性的改变。
