为了满足人们对甜食的需要,近年来,许多国家特别注意寻找高甜度和低热能的甜味物质。现已发现这类甜味物质不下百种,其中属于植物性的甜味质有多肽、甘草酸苷、黄酮糖苷、二氢查耳酮与卫矛醇等,这类甜味物质的甜度,有的比蔗糖高几百倍到上千倍。下面介绍主要的几种: 紫苏(Perilla frutescens)唇形科一年生草本植物,全国各地都有栽培,是民间常用的中药。在植物茎叶蒸馏提取的挥发油中,含有40—50%的紫苏醛。其味甜,甜度为蔗糖的200倍。
