中国“淮扬菜之乡”——扬州,作为全国烹饪界首家获此殊荣的城市,在2003“中国烹饪王国游”中,应充分发挥领军作用,为扩大淮扬菜在全国、全球的影响大显身手。同时,扬州旅游如何借“烹饪王国游”的东风,振飞餐饮和购物两翼,获得经济效益和社会效益双丰收,仍有许多值得研讨的课题。本文认为当务之急是利用好现有的餐饮品牌优势,整合一批拉得出、打得响的餐饮企业,抓紧培训一支高素质的服务员工队伍,以淮扬菜的品牌特色取胜。
