维生素B2又称核黄素,是人体内不可或缺的一种重要维生素。其微溶于水,在碱性溶液中易分解,在中性或酸性溶液中加热是稳定的。所以,在烹调过程中不容易遭破坏,但是怕光,尤其是紫外线。
