They do not play a predictable role at a specific dose, but rather in a complex way that we have just begun to understand. If you give up one orange a day instead of taking vitamin pills, you may lose the protection of the heart, cancer and anti-infectives. Exciting new discoveries are constantly being “labored” out of the lab and these new discoveries link long-neglected nutrients with brain function, cancer risk and more. It is becoming clear that while we eat rich foods, some of the vitals and minerals that we receive are still too low.
