为开辟大米防霉保鲜新途径,提高大米储藏技术水平,进行了电子加速器辐照大米防霉室内试验。将水分为14.5%和15.98%的大米样品分别装入塑料袋内,密封后置于电子加速器下处理,辐照剂量分别为2.4×105rad(样品传动速度为7.0m/min)、3.5×105rad(样品传动速度为4.8m/min)和5.0×105rad(样品传动速度为3.4m/min)。将辐照后及对照大米样品置于30℃温度下储藏,并不定期取样进行微生物带菌量、菌相以及大米主要品质指标的检测。试验结果表明:水分为14.50%的大米在30℃温度条件下安全储藏一年时间,采用能量E=1.8Mer、剂量为2.4×105rad的辐照处理为宜,且对大米品质影响不大。辐照剂量超过5.0×105rad,防霉效果虽得到提高,但大米褐变程度会加重。
In order to open up a new way to preserve mildew of rice and improve the technical level of rice storage, millet-proof indoor experiments with electron accelerator radiation were conducted. The rice samples with water content of 14.5% and 15.98% were respectively filled into plastic bags and sealed and placed under electron accelerator. The irradiation doses were 2.4 × 10 5 rad (the sample transmission speed was 7.0 m / min), 3.5 × 10 5 rad (sample transfer speed 4.8 m / min) and 5.0 × 10 5 rad (sample transfer speed 3.4 m / min). After irradiation and control rice samples were stored at 30 ℃ temperature, and not regularly sampled for microbial load, bacteria and rice quality indicators of the main test. The results showed that the rice with 14.50% moisture content could be safely stored for one year under the temperature of 30 ℃, and the irradiation with E = 1.8Mer and 2.4 × 105rad was suitable, and the rice quality Has little effect. Irradiation dose of more than 5.0 × 105rad, although the anti-mildew effect has been improved, but the degree of brown rice will aggravate.
