平菇属低温性菌类,其菌丝生长的温度范围虽然较广(6—35℃),但子实体生长的最适温度却在12—18℃之间。如果温度超过23℃,子实体原基的分化形成就会受到抑制。我省平菇栽培季节以头年9月至翌年4月最为合适。一般在3月中旬播种的菌块,收1—2批春菇以后,和3月下旬至4月上旬播种的菌块,菌丝长好以后,就会遇到23℃以上的气温,影响出菇。这时,就应采取措施,将上述尚未出完菇或完全没有出过菇的菌块妥为保管,使渡过温度较高的夏季。这样到秋凉后再进行出菇管理,仍可获得比较好的收成。下面,将几种常用的菌块越夏管理方法简单作一介绍。
