目的了解2011-2012年许昌县食源性致病菌对市售食品的污染情况。方法选择我县县城以及境内陈曹乡、邓庄乡等5个乡镇的超市、农贸市场以及餐饮供应单位,采集11类2 324份样品,参考《食源性致病菌监测工作手册》规定的操作程序对沙门菌等多种致病性菌株进行分离和鉴定。结果对2 324份样品进行检测,共检测出致病菌株212株,其检出率约为9.12%,沙门菌检出数量最多,为180株,约占所有检出致病菌的84.91%,鲜生肉致病菌检出率最高,为28.95%,农贸市场样品致病菌检出率高于超市、餐饮供应单位样品病菌检出率(P<0.05),县城样品病菌检出率低于5个乡镇病菌检出率(P<0.05)。结论许昌县食源性致病菌对市售食品的污染情况存在着一定的问题,必须加强对生产、销售各环节的监管。
Objective To understand the contamination of commercially available foods by foodborne pathogens in Xuchang County from 2011 to 2012. Methods A total of 2 324 samples in 11 categories were collected from supermarkets, farmers’ markets and catering suppliers in 5 counties and towns in Chenxian County and Dengzhuang Township in our county, and reference was made to the “Guidelines for Monitoring Foodborne Pathogenic Bacteria” Operating procedures Salmonella and other pathogenic strains were isolated and identified. Results A total of 2 324 samples were detected, of which 212 strains were detected. The detection rate was about 9.12%. The highest number of Salmonella was detected, accounting for 84.91% of all the tested pathogens. The detection rate of pathogenic bacteria in fresh meat was the highest (28.95%). The detection rate of pathogenic bacteria in the farmer’s market samples was higher than that in supermarkets and food supply suppliers (P <0.05) A detection rate of township bacteria (P <0.05). Conclusion Xuchang food-borne pathogens on the sale of food contamination of the existence of certain problems, we must strengthen the production and sales of all aspects of regulation.
