目的了解甘肃省陇南市食品中食源性致病菌污染状况,为食源性疾病预防、控制提供科学依据。方法从选定的监测点和采样场所定期随机采样,按样品原有储存温度要求在最短时间内送达实验室,按《2011年食源性致病菌监测工作手册》和中华人民共和国国家标准《食品卫生微生物学检验》(GB/T4789-2003)规定的程序和方法检测分离致病菌。结果全年共采集262份样品,从34份样品中检出污染程度不同的致病菌,总检出率为12.98%;共对7种食源性致病菌进行检测分离,其中蜡样芽孢杆菌检出率最高为8.06%;农贸市场和街头食品中检出率较高,分别为25.00%和22.95%;散装食品中的食源性致病菌检出率明显高于定型包装食品,差异有统计学意义(χ2=9.771,P<0.05)。结论陇南市市售食品食源性致病菌污染较为严重,以蜡样芽孢杆菌和金黄色葡萄球菌污染为主,主要集中在焙烤及油炸类、中式凉拌菜、米粉、米线和凉皮类食品中,农贸市场和街头食品中检出率最高。
Objective To understand the foodborne pathogens in Longnan City, Gansu Province, and provide a scientific basis for the prevention and control of foodborne diseases. Methods From the selected monitoring sites and sampling sites regularly random sampling, according to the original sample storage temperature requirements in the shortest time served to the laboratory, according to “Foodborne Pathogen Monitoring 2011 Handbook” and the People’s Republic of China National Standards Microbiological examination of food hygiene (GB / T4789-2003) provides procedures and methods for the detection of isolated pathogens. Results A total of 262 samples were collected during the year. Pathogenic bacteria with different degrees of contamination were detected in 34 samples with a total detection rate of 12.98%. Seven kinds of food-borne pathogens were detected and isolated. Among them, The detection rate of bacillus was the highest at 8.06%. The detection rate was higher in the farmer’s market and street food, accounting for 25.00% and 22.95% respectively. The detection rate of food-borne pathogens in bulk food was significantly higher than that of the packaged food There was statistical significance (χ2 = 9.771, P <0.05). Conclusion The food-borne pathogenic bacteria in commercial food in Longnan City are more polluted. The main pollutants are Bacillus cereus and Staphylococcus aureus, mainly concentrated in bakery and fried food, Chinese salad, rice flour, rice noodle and cold-skinned food In the farmers market and street food in the highest detection rate.
