目的了解驻马店市餐饮单位食品添加剂的使用和管理现状,分析存在的主要卫生问题,加强食品添加剂卫生管理,保障消费者的身体健康。方法使用统一设计的调查表等对辖区内210家餐饮单位食品添加剂的采购、贮存、使用、产品标识等情况进行调查。结果 80%的餐饮单位使用了食品添加剂,超范围使用的占14.88%;食品添加剂专用称量工具的配备率为15.48%。未发现在食品中非法添加非食用物质的现象。采购时索证率为22.02%。索证知晓率为59.52%,均无食品添加剂使用记录和固定存放场所。标签合格率为31.25%。结论驻马店市餐饮单位存在超范围、超剂量使用食品添加剂,产品标识不全,溯源及使用管理制度不落实等卫生问题。要建立长效机制,加强监管,开展风险监测,强化诚信和自律机制建设。
Objective To understand the status of the use and management of food additives in catering establishments in Zhumadian, analyze the main health problems and strengthen the hygiene management of food additives to ensure the health of consumers. Methods Using a unified design questionnaire and other areas of the 210 catering units of food additives procurement, storage, use, product labeling and other investigations. Results 80% of catering units used food additives, exceeding the scope of the use of 14.88%; food additives dedicated weighing tools with a rate of 15.48%. No unlawful addition of non-food stuffs to food was found. Procurement certificate rate was 22.02%. Certificate of awareness rate of 59.52%, no record of use of food additives and fixed storage place. The qualified rate of the label is 31.25%. Conclusion Zhumadian City, there are over-range catering units, over-the-counter use of food additives, product identification is not full, traceability and use management system is not implemented and other health issues. To establish a long-term mechanism, strengthen supervision, carry out risk monitoring, and strengthen the integrity and self-discipline mechanism.
