Both steam and boiling water at atmospheric pressure with natural and forced convective heat transfer mechanisms were applied for cooking potato.Effects of cooking conditions on weight loss,vitamin loss,pectin methylesterase (PME)activation,texture profile analysis (TPA),color (L*,a*,b*),surface and center cook values were investigated.Key factors for determining the quality of potato were not only cooking medium,temperature and time but also heat transfer mechanism.
