  Pulsed electric field (PEF) is a novel non-thermal food processing technology developed in the past 3 to 4 decades,whose sterilization principle is widely adapted as electroporation theory.Mathematic prediction model on inactivation of microorganism is one of the forefront theories in this field.By these models,the equipment and food manufacturers can predict storage time and control the food safety.
