The paper used the skins and scales,the wastes from tilapia processing,as materials to extract collagen and gelatin by acid and heat treatment respectively.Then comparative study was carded out on their properties including amino acid composition,molecular weight,FT-IR diagram,X-ray diffraction diagram,heat denaturation and contraction temperature,isoelectric point and functional properties such as hydroscopicity,water-reserving ability,oil absorption,emulsifying properties,foam-forming properties and gelling properties.
